Slow Cooker Chicken Curry

​Serves 4

750g skinless Chicken Breast, cut into chunks

1 Onion, sliced

2 Garlic Cloves, crushed

1 Red Pepper, diced

1 large Potato, diced

2 Carrots, sliced

1 Chilli, sliced

1 tsp Coconut Oil

1 stalk Lemongrass, sliced

550ml Light Coconut Milk

2 Kaffir Lime Leaves

2 tbsp Curry Powder

1 tsp Ground Turmeric

2 tsp Ground Cumin

1 tsp Hot Paprika

250ml Water

METHOD

1. Gently fry the onion & garlic in a frying pan for 1-2 minutes or until slightly browned.

2. Add all of the ingredients to a slow cooker, stir to mix evenly and leave on low for 7-9 hours.
