KIWI & AVOCADO TARTS

Ingredients (Makes 6)

For the tart cases:

180g ground almonds

1 egg

 1 tablespoon honey

Splash of cold water

For the filling:

1 soft, ripe avocado (skin and stone removed)

1 tablespoon honey

1 tablespoon freshly squeezed lime juice

1 kiwi fruit - sliced

Method​

Make the tart cases first. Mix all the ingredients together into a dough and place evenly in silicone cup cake cases. Press down and pack the dough into the tart case shapes. Place in a pre-heated oven at 180 degrees until golden brown (8-10 mins)

Remove from the oven and allow to cool completely before adding the filling.

For the filling, blend all the ingredients together until creamy. Scoop the filling into the tart cases and place a slice of kiwi fruit on the top.
