SPICY SWEET POTATO WEDGES
Ingredients (Serves 4-6)
750g Sweet Potatoes (cut into wedge shapes)
2 teaspoons ground cumin
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1 teaspoon fresh red chilli (finely chopped)
2 tablespoons olive oil
Big pinch of salt
- Preheat the oven to 220 degrees
- Add all of the ingredients to a large mixing bowl and coat the sweet potato evenly
- Place the wedges on a baking tray - make sure they are evenly spaced out and not lying on top of each other (unless you want soggy wedges - and nobody wants soggy wedges, trust me). You might need to use two baking trays or make them in batches to achieve this.
- Bake in the oven for 20-25 minutes or until slightly charred on the edges. Keep an eye on the oven after the 20 minute mark and make your own judgement call here.
