1kg butternut pumpkin (squash) Peeled and diced.
1 onion (diced)
2 tablespoons rogan josh curry paste
2 medium sweet potatoes (peeled and diced)
350g cauliflower florets
125ml plain yoghurt
Large handful chopped fresh coriander
1 tsp coconut oil
Saute the onion in the tsp coconut oil over a low heat for 2-3 minutes, then add the curry paste and heat through for another minute. Add the pumpkin/squash, sweet potato, cauliflower, yoghurt & water and bring to the boil. Lower the heat and simmer for 20-30 minutes or until the pumpkin and potato is cooked through. Take off the heat and toss in the fresh coriander. Serve piping hot.
