Chocolate Orange Chia Pudding

I actually didn't have high hopes for this recipe, because let's face it - 'healthy' versions of chocolate puddings tend to have weird aftertastes, or don't even taste like the real thing anyway. But I was pleasantly surprised with this creation. So much so that I wanted to share it with you... It only takes a couple of minutes to put together, but needs some time to rest in the fridge before eating it - so plan ahead for this one...

Ingredients (Serves 2)

1 cup of dairy free, unsweetened milk (coconut, almond, cashew, oat etc)

1/4 cup chia seeds

2 heaped tablespoons cocoa powder​

1 teaspoon vanilla extract

3 tablespoons juice from an orange

1 teaspoon zest from orange

2 tablespoons maple syrup

Method

Combine all of the ingredients in a large mason jar and whisk with a fork until they are all fully combined.

Cover and place in the fridge overnight, or at least for a couple of hours before serving, so that the chia seeds have time to expand and create the 'pudding' effect. Serve ice cold with fruit & chopped nuts - or just dive straight in to the jar with a spoon. ​
