Blueberry & Vanilla Breakfast Jar
Serves 4 | Per Serving: Kcal 186 | Protein: 6.4g | Carbs: 24g | Fat: 6.9g
1.5 cups Alpro Coconut or Unsweetened Almond
1/2 cup chia seeds
1 cup blueberries (frozen work best)
1/2 teaspoon vanilla extract
2 tablespoons runny honey or agave nectar
Place the blueberries, coconut/almond milk, honey and vanilla extract in a blender and blend until smooth.
Whisk the chia seeds into the blueberry/milky mixture.
Pour into 4 individual mason jars, pots or small bowls and cover. Leave in the fridge overnight or for at least 5 hours to set.
The chia seeds will expand and the consistency will become 'pudding' like.
Add some fresh blueberries and crushed nuts to serve if required (this will add extra calories to the ones listed above)
