Banana & Cashew Ice Cream


4 very ripe bananas

1 tablespoon of cashew nut butter

125g coconut yoghurt (use Greek yoghurt if you can't find "Coyo" (coconut yoghurt)

2 tablespoons full fat coconut milk


1. Blitz all ingredients together in a food processor and transfer to a mixing bowl

2. Whisk the mixture vigorously to get some air into it

3. Transfer to a plastic tub that is freezer safe

4. Pop the mixture into the freezer, remove every hour for 3 hours and whisk some more

5. Leave in the freezer overnight and then enjoy!
